Healthy Eating Snack-Paleo Cookies

 One of the easiest ways to eat healthy during travel is to plan in advance. Baking some healthy snacks is a great way to fill you up and keep your hunger from convincing you to eat those tempting airport and road trip treats.
 One of my favorite snack recipes is for Paleo "cookies". These have no flour, gluten, sugar, or dairy. Give it a try!
                 
 



Paleo Chocolate Chip Cookies
3 1/4 cups almond flour                 
1 tsp salt
 1 tsp baking soda                             
2 eggs
 1 tsp vanilla extract                            
1/2 cup coconut oil
1/2 cup pure honey/ maple syrup/ or agave nectar                                           
1/2  cup cocao nibs (or pure dark chocolate)
 Bake at 375* for 10-15 minute or until turning golden brown.

  *The cookies stay soft no matter how long they are cooked so do not try 
     to over cook to make crispy otherwise it will just burn the batch.
