Healthy Banana Bread

  Everyone wants to snack on a road trip, at work, on an airplane, or just hanging around the house. Snacks you can buy at the store easily are often full of chemicals and can make you feel guilty after indulging. Try this delicious recipe for healthy banana bread that won't make you regret going back for seconds. It is great as breakfast on-the-go and as a sweet muffin for young ones too!





Paleo Banana Bread

2 cups almond flour
2 tsp cinnamon
1 tsp vanilla extract
1 tsp baking soda
2 tbsp coconut oil
4 bananas mashed
4 eggs
1-4 tbs honey or agave nectar (to your preferences)
1 cup walnuts/pecans (optional)

Mix all ingredients (it helps to use a blender to incorporate the bananas). Cook at 350* for 30 minutes if making a pan loaf and 1-15 minutes if making muffins. Make sure not to over cook so they are moist (pull them out when you put a toothpick in and it comes out clean). 
These can be frozen for future breakfasts.
*I recommend putting some coconut sugar or maple sugar on top of the poured mix to make the muffin tops crispy and sweet.
**Heating them up in the morning is a great pair to your coffee!
