Paleo Banana Bread
2 cups almond flour
2 tsp cinnamon
1 tsp vanilla extract
1 tsp baking soda
2 tbsp coconut oil
4 bananas mashed
1-4 tbs honey or agave nectar (to your preferences)
1 cup walnuts/pecans (optional)
Mix all ingredients (it helps to use a blender to incorporate the bananas). Cook at 350* for 30 minutes if making a pan loaf and 1-15 minutes if making muffins. Make sure not to over cook so they are moist (pull them out when you put a toothpick in and it comes out clean).
These can be frozen for future breakfasts.
*I recommend putting some coconut sugar or maple sugar on top of the poured mix to make the muffin tops crispy and sweet.
**Heating them up in the morning is a great pair to your coffee!
